Cook bacon in a skillet until crisp; chop and set aside.
Sauté chopped onion in the bacon fat until soft.
Return bacon to the pan; stir in BBQ sauce and brown sugar.
Season ground beef, cook as patties, then break into crumbles.
Add chopped pickles and cheese to the beef; stir until melted.
Place filling on an egg roll wrapper and top with extra cheese if desired.
Fold and roll tightly; seal the edge with water.
Fry in hot oil until golden and crisp on all sides.
Drain on paper towels and serve with dipping sauce.
Store leftover rolls in the fridge up to 2 days in an airtight container.
Reheat in a 350°F oven for 8–10 minutes to restore crispness.
Freeze uncooked rolls for up to 1 month; fry from frozen adding 2 extra minutes.
Use cheddar or pepper jack if American cheese is unavailable.
