Cut around the thin end of each drumstick bone and push the meat down to form a lollipop.
Season the meat thoroughly with BBQ rub.
Wrap each piece tightly with one strip of bacon.
Apply a second light dusting of seasoning and wrap the bone ends in foil.
Grill over medium heat until the bacon crisps and the chicken reaches 150°F.
Whisk BBQ sauce, honey, butter, and water together until smooth.
Dip each lollipop in the warm glaze and return to the grill to set the sauce.
Rest two minutes, then serve hot.
Tip: Keep the grill at medium heat so the bacon renders without charring the glaze.
Store leftovers in an airtight container in the refrigerator up to 3 days. Reheat in a 350°F oven for 10–12 minutes to keep the bacon crisp. Shape and wrap the lollipops a day ahead for faster grilling.
