  • 12 | strips | bacon |
  • 2 | tbsp | BBQ seasoning rub |
  • | | aluminum foil | for bone ends
  • 1 | cup | BBQ sauce | or hot-sauce base
  • ¼ | cup | honey |
  • 2 | tbsp | butter |
  • ¼ | cup | water |

  • 12 | strips | bacon |
  • 2 | tbsp | BBQ seasoning rub |

  • 1 | cup | BBQ sauce | or hot-sauce base
  • ¼ | cup | honey |
  • 2 | tbsp | butter |
  • ¼ | cup | water |

Instructions
 

  • Cut around the thin end of each drumstick bone and push the meat down to form a lollipop.
  • Season the meat thoroughly with BBQ rub.
  • Wrap each piece tightly with one strip of bacon.
  • Apply a second light dusting of seasoning and wrap the bone ends in foil.
  • Grill over medium heat until the bacon crisps and the chicken reaches 150°F.
  • Whisk BBQ sauce, honey, butter, and water together until smooth.
  • Dip each lollipop in the warm glaze and return to the grill to set the sauce.
  • Rest two minutes, then serve hot.
  • Tip: Keep the grill at medium heat so the bacon renders without charring the glaze.

Notes

Store leftovers in an airtight container in the refrigerator up to 3 days. Reheat in a 350°F oven for 10–12 minutes to keep the bacon crisp. Shape and wrap the lollipops a day ahead for faster grilling.
