Arrange lettuce leaves on a round serving plate as a base.
Place cucumber slices in a curved line along one side.
Add tomato wedges opposite the cucumber.
Fan salami slices around the outer edge of the plate.
Layer ham or mortadella over an inverted wine glass to form a rose.
Carefully remove the glass and adjust the rose shape.
Place the meat rose in the center of the platter.
Scatter green olives around the rose and add parsley sprigs.
Assemble just before serving for the freshest appearance.
Form the meat rose up to 2 hours ahead and refrigerate.
