  • 1 | | yellow bell pepper | diced

  • 1 | tsp | salt |
  • 1 | tsp | ground cumin |
  • 1 | tsp | paprika |
  • 6 | | flour tortillas |
  • 6 | | cheese slices | melting type
  • 1 | cup | shredded mozzarella | for topping
  • 1 1/4 | cups | milk |
  • 2 | | eggs |
  • 1/4 | tsp | chicken stock powder |
  • 1 | | | salt and black pepper | for milk mixture
  • 2 | tbsp | flour | mixed with water for sealing paste

Instructions
 

  • Season diced chicken with minced garlic, lemon juice, and black pepper.
  • Heat oil in a pan and cook the chicken until opaque.
  • Add diced onion, bell peppers, thyme, salt, cumin, and paprika.
  • Stir-fry until vegetables soften and mixture is lightly seared.
  • Cut tortillas in half and place cheese plus filling on each.
  • Fold into triangles and seal edges with flour paste.
  • Arrange in oiled baking dishes and pour over whisked milk-egg mixture.
  • Bake at 190°C until golden, top with shredded cheese, and bake until melted.

Notes

Store leftovers in the fridge up to 3 days and reheat in the oven.
Seal edges firmly to prevent leaks during baking.
Swap tortillas for thin pita if needed.
Let the triangles soak only 5–10 minutes before baking.
