Cheesy Baked Meat Tortilla Rolls

Soft flour tortillas filled with savory seasoned ground meat, vegetables, and melted cheese, then brushed, topped with mozzarella, and baked until golden. Ready in under an hour with no dough to knead.

Ingredients
  

  • 8 | | flour tortillas |
  • 1 | | onion | finely chopped
  • 1 | | green bell pepper | cubed
  • 1 | lb | ground meat |
  • 2 | cloves | garlic | grated
  • 1 | tsp | salt |
  • 1 | tsp | sweet paprika |
  • 0.5 | tsp | black pepper |
  • 1 | cup | tomato sauce |
  • 1 | handful | fresh basil leaves |
  • 4 | slices | melting cheese |
  • 2 | tbsp | butter | for greasing
  • 1 | | egg yolk |
  • 3 | tbsp | milk |
  • 1.5 | cups | grated mozzarella |
  • 2 | tbsp | olive oil |

Instructions
 

  • Finely chop the onion and cube the green bell pepper.
  • Heat olive oil in a skillet and sauté the onion until soft.
  • Add the bell pepper and cook a few minutes more.
  • Add ground meat and cook until browned, breaking it up.
  • Grate in garlic and season with salt, paprika, and black pepper.
  • Pour in tomato sauce, tear in basil, cover, and simmer under 10 minutes.
  • Stir in cheese slices until melted.
  • Spoon filling onto tortillas and roll tightly.
  • Grease baking tray with butter and arrange rolls seam-side down.
  • Mix egg yolk with milk and brush over the rolls.
  • Sprinkle grated mozzarella on top.
  • Bake at 375°F for 15 minutes until golden and bubbly.

Notes

Store leftovers in an airtight container in the fridge up to 3 days.
Reheat in a 350°F oven for best texture.
Assemble rolls ahead and refrigerate unbaked for up to 1 day.
Freeze unbaked rolls for later; bake from frozen with extra time.
