Ingredients
  

  • 4 | slices | white bread | crusts optional
  • 4 | large | eggs |
  • 1 | cup | shredded mozzarella cheese |
  • 2 | tbsp | butter |
  • 1/4 | tsp | salt |
  • 1/8 | tsp | black pepper |
  • 2 | tbsp | milk | optional

Instructions
 

  • Cut each bread slice into three even strips.
  • Melt butter in a medium nonstick skillet over medium heat.
  • Add bread strips in a single layer and toast lightly on both sides.
  • Whisk eggs with salt, pepper, and milk if using until smooth.
  • Pour eggs evenly over the bread strips in the pan.
  • Sprinkle mozzarella over the surface once edges begin to set.
  • Fold the omelette in half with a spatula and cook one more minute.
  • Transfer to a board, rest briefly, then slice and serve.

Notes

Store leftovers wrapped in the refrigerator up to 1 day.
Reheat gently in a skillet over low heat to restore the cheese melt.
