Ingredients
  

  • 1.5 | lbs | ground beef |
  • 4 | oz | cheddar cheese | cubed
  • 1 | cup | mayonnaise |
  • 2 | | tomatoes | diced
  • 1 | cup | mushrooms | sliced
  • 2 | cups | cabbage | shredded
  • 2 | large | onions | sliced into rings
  • 4 | medium | potatoes | thinly sliced
  • 4 | large | eggs |
  • 1 | cup | shredded cheese |
  • 1 | tsp | salt | or to taste
  • 0.5 | tsp | black pepper | or to taste

Instructions
 

  • Form ground beef into a tight log and slice into thick rounds.
  • Press each round into a small glass to form a cup and add cheddar cubes to the center.
  • Steam the filled glasses in a covered pan with a little water until the meat firms.
  • Mix diced tomatoes, sliced mushrooms, shredded cabbage, and mayonnaise in a bowl.
  • Arrange onion rings on a baking tray and cover with thin potato slices.
  • Spoon the creamy vegetable mixture evenly over the potatoes.
  • Place the meat cups on top and crack one egg into each center well.
  • Sprinkle shredded cheese over everything and bake at 375°F until eggs set and potatoes are tender.
  • Rest five minutes before serving so the juices settle.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days.
Reheat gently in a 325°F oven to keep the meat cups from drying out.
For a lighter version, replace mayonnaise with Greek yogurt.
Shape the meat cups a day ahead and refrigerate until ready to assemble.
