Ingredients
  

  • 1 | | large flour tortilla |
  • 4 | | large eggs | beaten
  • 1 | cup | sliced sausage |
  • 1/2 | cup | chopped green bell pepper |
  • 1/2 | cup | chopped red bell pepper |
  • 6 | | slices mozzarella cheese |
  • 1 | tbsp | cooking oil |
  • 1 | | salt and black pepper | to taste

Instructions
 

  • Heat oil in a large non-stick skillet over medium heat.
  • Add chopped green and red peppers; sauté 3–4 minutes until softened.
  • Stir in sliced sausage and cook until lightly browned.
  • Pour beaten eggs evenly over the mixture.
  • Lay cheese slices on top of the eggs.
  • Place the flour tortilla over the filling and press gently.
  • Cover and cook 2 minutes, then carefully flip so the tortilla is on the bottom.
  • Cook until the tortilla is golden and crisp.
  • Rest 1 minute, slice into wedges, and serve hot.

Notes

Store leftovers in an airtight container in the fridge up to 2 days.
Reheat in a dry skillet to keep the tortilla crisp.
Substitute any melting cheese or cooked protein you have on hand.
