  • 4 | | large russet potatoes |
  • 1 | lb | ground beef |
  • 1 | | green bell pepper | diced
  • 1 | | red bell pepper | diced
  • 1 | | small onion | diced
  • 2 | cloves | garlic | minced
  • 1 | cup | heavy cream |
  • 1 | cup | shredded mozzarella |
  • 0.5 | cup | shredded cheddar |
  • 2 | tbsp | olive oil |
  • 1 | tsp | salt |
  • 0.5 | tsp | black pepper |
  • 0.5 | tsp | paprika |
  • 2 | cups | cooked white rice | for serving

Instructions
 

  • Preheat oven to 400°F. Scrub potatoes, pierce with a fork, rub with olive oil and salt.
  • Bake potatoes directly on oven rack for 50–60 minutes until tender.
  • Meanwhile, brown ground beef in a skillet over medium heat; drain fat.
  • Sauté onion, garlic, and diced peppers in the same skillet until soft.
  • Combine beef with vegetables; season with salt, pepper, and paprika.
  • Slice baked potatoes in half and scoop out most of the flesh, leaving sturdy shells.
  • Fill shells with the beef mixture and place on a baking sheet.
  • Pour heavy cream over the filling and top with mozzarella and cheddar.
  • Bake 12–15 minutes until cheese is melted and golden. Serve over rice.

Notes

Store leftovers in an airtight container in the fridge up to 3 days.
Reheat in a 350°F oven to keep cheese melted and skins crisp.
Assemble ahead and refrigerate unbaked for up to 24 hours.
