- 2 | tbsp | butter |
- 8 | oz | mushrooms | sliced
- 1 | | red onion | diced
- 1 | cup | chicken broth |
- 0.5 | cup | heavy cream |
- 1.5 | lbs | potatoes |
- 0.25 | cup | milk or cream | for mash
- 2 | tbsp | butter | for mash
- 1 | | cucumber | sliced
- 1 | tbsp | fresh dill |
- 1 | tsp | salt | to taste
- 0.5 | tsp | black pepper | to taste
- 2 | tbsp | fresh parsley | for garnish
Season drumsticks with salt and pepper.
Sear in butter until golden on all sides; remove.
Sauté onion and mushrooms in the same skillet.
Add broth, return chicken, and simmer until cooked.
Stir in cream and warm through.
Boil and mash potatoes with butter and milk.
Toss cucumber with dill for the salad.
Plate mash, top with chicken, sauce, and parsley.
Pat chicken dry for better searing.
Simmer gently after adding cream.
Leftovers reheat well on the stove.
Store salad separately to keep it crisp.
