Ingredients
  

  • 2 | | large baking potatoes |
  • 2 | tbsp | butter |
  • 12 | | king prawns | peeled and deveined
  • 3 | cloves | garlic | minced
  • 1 | cup | heavy cream |
  • 1/2 | cup | shredded mozzarella |
  • 1/4 | cup | grated Parmesan |
  • 2 | tbsp | chopped parsley |
  • 1/4 | cup | crispy fried onions |
  • | | salt and black pepper | to taste

Instructions
 

  • Bake scrubbed potatoes at 400°F for 50-60 minutes until tender.
  • Slice open lengthwise and push ends to bloom the potato.
  • Season inside, add butter, and sprinkle with mozzarella and Parmesan.
  • Sauté king prawns with minced garlic until pink.
  • Add heavy cream to the pan and simmer briefly.
  • Stir in Parmesan and most of the parsley until smooth.
  • Top potatoes with prawns and ladle over the creamy sauce.
  • Finish with crispy fried onions and remaining parsley.
  • Tip: Do not overcook the prawns or they will become tough.

Notes

Potatoes can be baked ahead and reheated before topping.
Use full-fat cream for the richest, most stable sauce.
Leftover sauce is excellent over pasta or steamed vegetables.
Assemble just before serving to keep the potato skin crisp.
