Ingredients
  

  • 4 | | chicken thighs |
  • 8 | oz | mushrooms | sliced
  • 1 | | medium onion | sliced
  • 1 | cup | heavy cream |
  • 2 | tbsp | olive oil |
  • 1 | tsp | salt |
  • 0.5 | tsp | black pepper |
  • 2 | tbsp | chopped parsley |

Instructions
 

  • Season chicken thighs with salt and black pepper.
  • Heat oil in a skillet and sear chicken skin-side down until golden.
  • Flip and cook the other side, then remove to a plate.
  • Add sliced mushrooms and cook until browned.
  • Add sliced onion and cook until soft.
  • Pour in heavy cream and simmer until slightly thickened.
  • Return chicken to the sauce and simmer until cooked through.
  • Garnish with chopped parsley and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently on the stove with a splash of cream.
Chicken breasts can replace thighs if preferred.
Simmer the cream gently to prevent separation.
