Pat chicken tenders dry and place in a large bowl.
Add mustard, hot sauce or chili paste, and milk; mix until fully coated.
In a separate bowl whisk flour with paprika, garlic powder, salt, pepper, and cayenne.
Dredge each piece of chicken thoroughly in the seasoned flour, pressing to adhere.
Heat 2 inches of oil in a deep pan to 350°F.
Fry tenders in batches for 4-6 minutes, turning once, until deep golden and cooked through.
Transfer to a wire rack to drain and rest.
