Ingredients
  

  • 3 | | medium potatoes | peeled
  • 1 | | large egg |
  • 0.5 | tsp | black pepper |
  • 0.5 | tsp | salt |
  • 2 | tbsp | chopped fresh parsley |
  • 4-6 | | cubes mozzarella cheese |
  • 1 | | | oil for frying

Instructions
 

  • Peel and grate the potatoes using a box grater.
  • Rinse grated potatoes in cold water, then squeeze dry thoroughly.
  • Mix potatoes with egg, salt, pepper, and parsley.
  • Flatten a portion of mixture, place cheese cube in center, and seal into a patty.
  • Heat oil in a skillet over medium heat.
  • Fry patties 3-4 minutes per side until deep golden and crisp.
  • Drain on paper towels and serve hot while cheese is melted.

Notes

Squeeze potatoes very well to keep patties crispy.
Best enjoyed fresh and hot for maximum cheese pull.
Leftovers reheat well in a skillet or air fryer.
Seal cheese completely to prevent leaking during frying.
