Soft Boursin cheese and cherry tomatoes roast together into a creamy garlic-herb sauce, then get tossed with short pasta and fresh greens for a quick, comforting dinner.

Ingredients
  

  • 2 | | rounds Boursin cheese | garlic & herb
  • 2 | cups | cherry or grape tomatoes |
  • 3 | cloves | garlic | smashed
  • 3 | tbsp | olive oil |
  • 12 | oz | short pasta | fusilli or similar
  • 2 | cups | fresh spinach or arugula |
  • ¼ | cup | grated Parmesan |
  • | | salt and black pepper | to taste
  • | | dried Italian herbs | optional

Instructions
 

  • Preheat oven to 400°F.
  • Place Boursin rounds in a baking dish.
  • Scatter tomatoes and smashed garlic around the cheese.
  • Drizzle with olive oil and season lightly.
  • Bake for 20 minutes until cheese is melted and tomatoes are soft.
  • Meanwhile, cook pasta in salted water; reserve some pasta water.
  • Mash the baked cheese and tomatoes into a creamy sauce.
  • Toss in the drained pasta, add greens, and finish with Parmesan.

Notes

Leftovers keep in the refrigerator up to 3 days; reheat with a splash of water.
Any short pasta shape works well to hold the sauce.
Use room-temperature Boursin for faster, even melting.
Add cooked chicken or shrimp after tossing for extra protein.
