Ingredients
  

  • 2 | cups | potato puree | smooth and warm
  • 8 | oz | green beans |
  • 4 | slices | bacon |
  • 2 | | breaded croquettes | or chicken pieces
  • 0.5 | cup | creamy sauce |
  • 1 | tsp | black pepper | to taste
  • 1 | tsp | salt | to taste

Instructions
 

  • Ensure potato puree is smooth, warm, and pipeable; load into piping bag.
  • Pipe puree onto the plate in connected S-curves or swirls.
  • Blanch green beans and wrap bundles tightly with bacon.
  • Cook bacon-wrapped beans until bacon is crisp.
  • Heat or cook the breaded protein until golden.
  • Nestle the bean bundles into the puree curves.
  • Place the protein beside the puree.
  • Spoon sauce around the protein and finish with black pepper.

Notes

Keep puree thick enough to hold piped shape.
Pipe just before serving for sharpest curves.
Cook bacon-wrapped beans last to keep them crisp.
Sauce lightly so components stay distinct.
