Ingredients
  

  • 2 | cups | mashed potatoes | cooled
  • 1 | cup | shredded cooked chicken |
  • 0.25 | cup | all-purpose flour |
  • 0.25 | cup | fresh parsley | chopped
  • 0.5 | teaspoon | salt |
  • 0.25 | teaspoon | black pepper |
  • | | oil | for frying

Instructions
 

  • Place cooled mashed potatoes in a large bowl.
  • Add shredded chicken, flour, parsley, salt, and pepper.
  • Mix thoroughly until evenly combined.
  • Shape mixture into oval or round croquettes.
  • Heat 1 inch of oil in a skillet over medium heat.
  • Fry croquettes 3–4 minutes per side until golden.
  • Drain on paper towels and serve hot.

Notes

Store leftovers in the fridge up to 2 days.
Reheat in a 375°F oven to keep the coating crisp.
Mixture can be shaped and refrigerated overnight before frying.
Add extra flour if the mixture feels too soft to shape.
