- 1 | large bunch | fresh cilantro |
- 2 | | limes | juiced
- 1/4 | cup | olive oil |
- 1/2 | tsp | salt |
- 1/4 | tsp | black pepper |
- 2 | cups | cooked white rice |
- 1 | tbsp | water | if needed for sauce
Heat olive oil in a skillet and fry peeled garlic cloves until golden and fragrant.
Transfer garlic and oil to a blender with cilantro, lime juice, salt, and pepper; blend until smooth.
Adjust sauce consistency with a splash of water if needed and taste for seasoning.
Cook shrimp in the same skillet over medium-high heat for about 2 minutes per side until pink.
Pour most of the green sauce over the shrimp and toss to coat evenly.
Simmer together for one minute so flavors meld.
Best served immediately for brightest color and flavor.
