Ingredients
  

  • 1 | | rack of lamb | about 1.5–2 lb Frenched preferred
  • 1 | tsp | kosher salt |
  • 1/2 | cup | fresh parsley leaves |
  • 1/4 | cup | fresh basil leaves |
  • 1/2 | cup | shelled pistachios |
  • 1/4 | cup | breadcrumbs |
  • 2 | tbsp | Dijon mustard |
  • 3 | tbsp | unsalted butter |
  • 3 | | garlic cloves | smashed
  • 2 | | rosemary sprigs |
  • 1 | | black pepper | freshly ground
  • 1 | | chives | for garnish
  • 1 | | silken mashed potatoes | for serving
  • 1 | | red wine sauce | for serving

Instructions
 

  • Pat rack dry and score fat in diamond pattern. Season all sides with salt and pepper.
  • Pulse parsley, basil, pistachios, and breadcrumbs in food processor until finely chopped.
  • Sear rack fat-side down in hot skillet until deeply golden, 4–5 minutes.
  • Add butter, garlic, and rosemary; baste continuously with foaming butter.
  • Transfer to rack-lined sheet. Brush with Dijon and press crust mixture firmly on top and sides.
  • Roast at 400°F until internal temperature reaches 125–130°F for medium-rare.
  • Rest 10 minutes, then slice between bones into chops.
  • Plate over silken mash, drizzle with sauce, and garnish with chives.
  • Tip: Rest fully before slicing to keep juices inside.
  • Tip: Press crust firmly so it adheres during roasting.

Notes

Store leftovers in an airtight container up to 3 days.
Reheat gently in a low oven to preserve crust and pink center.
Freeze uncooked crusted rack tightly wrapped up to 1 month; thaw overnight before roasting.
Use a thermometer for perfect doneness every time.
