- 1.5 | lb | chicken breast | cut into 1-inch cubes
- 1 | tsp | paprika |
- 0.5 | tsp | ground cumin |
- 0.5 | tsp | salt |
- 0.25 | tsp | black pepper |
- 2 | tbsp | chopped fresh cilantro |
- 2 | tbsp | chopped fresh parsley |

Cut chicken breast into even 1-inch cubes and place in a bowl.
Season with paprika, cumin, salt, and black pepper.
Add chopped cilantro and parsley.
Mix in egg yolk and olive oil until chicken is evenly coated.
Thread the marinated chicken onto skewers.
Grill or bake over medium-high heat for 8-10 minutes, turning once.
Brush the hot skewers with green herb sauce.
Serve immediately with any remaining sauce drizzled over the top.
Soak wooden skewers in water for 20 minutes before use.
Leftovers keep in the refrigerator for up to 3 days.
