- 0.5 | cup | heavy cream |
Place sugar in a light-colored saucepan over medium heat.
Allow sugar to melt without stirring until it turns clear then amber.
Remove from heat and carefully pour in the water while stirring.
Return to low heat and stir until any hardened caramel dissolves.
Slowly add the heavy cream while stirring constantly.
Simmer 2–3 minutes until the sauce thickens slightly and turns glossy.
Remove from heat and cool 5 minutes before using or storing.
Store in a sealed jar in the refrigerator for up to 2 weeks.
Reheat gently on the stove or in short microwave bursts, stirring often.
Add a pinch of salt at the end for salted caramel if desired.
Sauce thickens further as it cools; thin with a splash of cream if needed.
