Ingredients
  

  • 4 | | large ripe tomatoes |
  • 3 | tbsp | olive oil |
  • 2 | tbsp | fresh parsley | chopped
  • 1 | tbsp | dried oregano |
  • ¼ | | red onion | finely diced
  • ½ | tsp | salt |
  • 4 | slices | crusty bread | for serving

Instructions
 

  • Select ripe tomatoes and slice into thick rounds.
  • Arrange the slices on a serving plate.
  • Finely dice the red onion.
  • Chop the fresh parsley.
  • In a bowl combine olive oil, oregano, parsley, red onion, and salt.
  • Stir the marinade until well mixed.
  • Spoon the mixture evenly over the tomato slices.
  • Serve immediately with crusty bread.

Notes

Best served right after dressing so the tomatoes stay firm.
Store any leftover marinade covered at room temperature for a few hours.
Use the highest quality olive oil you have for the best flavor.
Add a splash of vinegar if you prefer a tangier dressing.
