Mexican Green Rice

- 1.5 | cups | long-grain white rice |
- 1 | | poblano pepper |
- 1 | cup | fresh cilantro |
- 0.5 | | white onion |
- 2 | | garlic cloves |
- 2 | cups | water |
- 2 | tbsp | oil |
- 1 | tsp | salt |
Blend poblano, cilantro, onion, garlic, and water until smooth.
Heat oil in a large skillet over medium heat.
Add rice and toast 3–4 minutes until lightly golden.
Pour the green mixture over the rice and stir.
Add salt and stir once more.
Cover, reduce heat to low, and simmer 15–18 minutes.
Remove from heat and rest covered for 5 minutes.
Fluff with a fork and serve.
Store leftovers in the fridge up to 3 days.
Reheat with a splash of water to restore moisture.
Long-grain rice gives the best fluffy texture.
Adjust salt to taste after cooking.
