Mexican Green Rice

Ingredients
  

  • 1.5 | cups | long-grain white rice |
  • 1 | | poblano pepper |
  • 1 | cup | fresh cilantro |
  • 0.5 | | white onion |
  • 2 | | garlic cloves |
  • 2 | cups | water |
  • 2 | tbsp | oil |
  • 1 | tsp | salt |

Instructions
 

  • Blend poblano, cilantro, onion, garlic, and water until smooth.
  • Heat oil in a large skillet over medium heat.
  • Add rice and toast 3–4 minutes until lightly golden.
  • Pour the green mixture over the rice and stir.
  • Add salt and stir once more.
  • Cover, reduce heat to low, and simmer 15–18 minutes.
  • Remove from heat and rest covered for 5 minutes.
  • Fluff with a fork and serve.

Notes

Store leftovers in the fridge up to 3 days.
Reheat with a splash of water to restore moisture.
Long-grain rice gives the best fluffy texture.
Adjust salt to taste after cooking.
