Plantain Ham and Cheese Rolls

Soft ripe plantains flattened, filled with ham and mozzarella, rolled tight, and pan-fried until golden and crispy. Stretchy cheese and sweet-savory flavor in every bite.

Equipment

  • 1 | Parchment paper | for flattening
  • 1 | Rolling pin | or hands
  • 1 | Nonstick skillet |

Ingredients
  

  • 4 | | ripe plantains | soft and spotted
  • 8 | slices | ham | deli-style
  • 8 | slices | mozzarella | or other melting cheese
  • 2 | tbsp | oil | for frying
  • 1 | | salt | to taste

Instructions
 

  • Peel and cook plantains until completely soft; drain and cool slightly.
  • Place one plantain between parchment sheets and flatten into a thin oval.
  • Top the flattened plantain with ham slices.
  • Add mozzarella slices over the ham.
  • Roll the plantain tightly around the filling and press to seal.
  • Heat oil in a nonstick skillet over medium heat.
  • Place rolls seam-side down and fry, turning, until golden and crispy on all sides.
  • Rest one minute, then serve hot while the cheese is stretchy.
  • Tip: Keep the heat at medium so the plantain caramelizes without burning before the cheese melts.

Notes

Best eaten fresh while the exterior is crisp and cheese is melted.
Assembled rolls can be refrigerated a few hours before frying.
Reheat leftovers in a hot skillet to restore crispness.
Any good melting cheese can replace mozzarella.
