Golden fried empanadas filled with creamy sliced sausage, onions, and melted cheese sealed inside soft flour tortillas. Crispy on the outside, gooey and rich on the inside.

Ingredients
  

  • 12 | oz | cooked sausage | sliced into rounds
  • 1 | small | onion | sliced
  • 1 | cup | heavy cream |
  • 1 | cup | shredded mozzarella |
  • 6 | | flour tortillas |
  • 0.5 | tsp | black pepper |
  • | | oil | for frying

Instructions
 

  • Slice the cooked sausage into thin rounds.
  • Cook the onion and sausage in a skillet until the onion softens.
  • Pour in the heavy cream and simmer for 2 minutes.
  • Stir in the shredded mozzarella and black pepper until melted and creamy.
  • Spoon the filling into the center of each flour tortilla.
  • Fold the sides and ends to form a sealed rectangular packet.
  • Heat oil to 350°F and fry the packets 2-3 minutes per side until golden.
  • Drain on paper towels and serve immediately while the cheese is stretchy.

Notes

Do not overfill the tortillas to prevent leaking.
Leftovers reheat well in an air fryer or oven.
Kielbasa or smoked sausage works great in this recipe.
Bake at 400°F for a lighter alternative to frying.
