- 1 | tsp | salt |

- 3 | cups | water |
- 1 | cup | coconut cream |
- 4 | | green chilies | sliced
Heat oil in a deep pan over medium heat and add bay leaves, cardamom, cinnamon, and star anise until fragrant.
Add sliced onions and cook until soft and lightly golden.
Add beef cubes and sear on all sides until browned.
Nestle whole unpeeled garlic bulbs among the beef.
Pour in water, season with salt and pepper, and bring to a simmer.
Cover and cook on low heat for 90 minutes until beef is fork-tender.
Stir in coconut cream and sliced green chilies; simmer uncovered 5 minutes.
Rest a few minutes then serve hot with rice.
Tip: Keep heat low once covered so the garlic softens without breaking apart.
Store leftovers in an airtight container in the fridge up to 3 days.
Reheat gently on the stove with a splash of water.
Freezes well for up to 3 months without rice.
Use full-fat coconut milk if cream is unavailable.
